Ingredients to make Indori Poha
Poha – 2 cups
Onion – 1
Green chili – 3-4
Green coriander – 3-4 tbsp
Pomegranate seeds – 1/2 cup
Curry leaves – 10-15
Peas – 1/2 cup
Rai – 1 tsp
Fennel seeds – 1 tsp
Turmeric – 1/2 tsp
Coriander seeds – 1 tsp
Sugar – 1 tsp
Asafoetida – 1 pinch
Lemon – 1
Sev – 1/4 cup
Oil – 2 tbsp
salt – as per taste

Indori Poha Recipe
If you want to make Indori style poha for breakfast, first clean the poha and after washing it with water 2-3 times, keep the soaked poha in a sieve. In some time the extra water present in the poha will drain out. Meanwhile, finely chop green coriander, green chillies and onions. Now put oil in the pan and heat it. After the oil is hot, add mustard seeds, coriander seeds, asafoetida and fennel and fry for a few seconds. When the mustard starts crackling, add curry leaves and finely chopped onions.

Now roast the spices and onions while stirring. It has to be baked till the color of the onion turns light pink. Meanwhile add turmeric, sugar and salt as per taste to the soaked poha and mix well with hands. After this, put the poha in the pan and mix it well with the spices. If needed, you can also sprinkle some water on the poha, so that the poha will remain soft.
